STEP 1: PREPARATION

Preheat the oven to 350 degrees. Then prepare the loaf pan by lining with parchment paper or spray with non stick cooking oil.

STEP 2: MAKE THE BATTER

In a large bowl, combine milk, eggs, sugar, oil, and vanilla, whisk until combined. In a separate mixing bowl combine flour, baking powder, and and salt. Then add the dry flour mixture to the wet and mix until fully combined, don’t over mix the batter. In a small bowl, toss the chopped strawberries with flour until evenly coated and fold into the batter.

STEP 3: BAKE STRAWBERRY BREAD

Pour batter in the prepared loaf pan. Then bake for 55-60 minutes on the middle oven rack to check if the bread is done, you can poke a toothpick in and if it comes out clean it is ready. Allow bread to cool completely on a wire rack before slicing and serving. Enjoy!

Ingredients

  • ¾ cup sugar
  • ½ cup milk
  • ½ cup oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 ½ cups flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 ½ cups diced strawberries
  • 2 tbsp all purpose flour

Instructions

  • Preheat oven to 350 degrees. Prepare a 9×5 inch loaf pan with non-stick spray or oil.

  • Combine the sugar, milk, oil, eggs, and vanilla in a medium bowl. Whisk until combined.

  • In a separate bowl, combine flour, baking powder, and salt.

  • Add dry ingredients to wet ingredients and stir together until just combined. You don’t want to over mix the batter.

  • Stir strawberries with 2 tablespoons of flour and carefully fold into batter.

  • Pour the batter into the prepared loaf pan and bake in preheated oven for 55 – 60 minutes or until golden brown and a toothpick inserted in center of the bread comes out clean.

  • Remove from oven. Place bread in pan on a cooling rack for 5 minutes.

  • After 5 minutes, loosen edges of bread with a knife and carefully turn out bread. Allow bread to continue cooling until completely cooled.
