High protein and low carb granola ingredients I used.

I usually have a wide variety of nuts, seeds and other healthy ingredients in my house since I make so many keto recipes. But this is a keto granola without nuts so I didn’t use any of those. However if you like the flavor of pecans or walnuts you can easily add a few.

All I used was unsweetened coconut flakes, hemp seeds, flaxseeds, sunflower seeds, pumpkin seeds Swerve brown sugar, vanilla extract and Isopure banana flavored protein powder.

I also used a little almond milk to keep it together and coconut oil and butter to toast the ingredients. If you have a nut allergy you could use coconut milk or even water in place of the almond milk.

A note about the protein powder: You can use any kind of protein powder you want but try to use a low carb one like IsoPure Zero Carb protein powder which has 0g carbs or Quest. The protein powder adds flavor, protein and makes the granola stick together so it’s a key ingredient.

And while I specifically picked all of these ingredients because I wanted to keep this recipe low carb, if you don’t care about carbs you can add some dried fruit or chunks of chocolate too.

Ways to eat & store this keto friendly granola.

I’ve been eating this granola as both a sweet keto snack and as a cold cereal for a low carb breakfast. It is sweet, crunchy and very, very filling.

You can also eat it over plain full fat yogurt to make a low carb parfait or eat it with keto pudding or ice cream.

Store this homemade granola in a sealable container or sealed baggie to keep it crisp. I end up eating this in just a few days and it stay crunchy for me. You can also put in in a freezer friendly container and store it in the freezer. It will last much longer in there.

Recipe Tips and Notes

  • I used a variety of seeds, coconut oil, butter, sweetener, almond milk and protein powder. You can use all or some of the types of seeds I used and even nuts. All the seeds and nuts will create that crunchy texture.
  • You can substitute coconut milk or water for almond milk if you have a nut allergy.
  • Try to use a low carb protein powder like IsoPure banana protein powder as it’s a key element to this granola. It adds flavor, protein and makes it stick together. You can use any flavor or brand you want though.
  • To add flavor without carbs, try using different flavor extracts. You can add banana extract to add even more banana flavor in this recipe. Extracts come in all kinds of flavors and easily found in the grocery store baking aisle. Maple extract would go great too!
  • I used Swerve brown sugar sweetener because I think it adds to the banana bread flavor but you can use any kind of powdered sweetener you wish. Lakanto golden is another good one to try. If you don’t care about carbs you can use brown sugar or coconut sugar.
  • NOTE: This granola is very filing IMO. Sometimes I want to eat more than 1 serving for a snack and if I do, I am not hungry for a very long time. That just might be me though but keep it mind when you try it.
  • Serving size is roughly ⅓ cup.
