However, it is key to bringing out the flavors. Without salt they will likely taste flat and overly sweet.Skye —February 1, 2016 @ 6:37 AM Reply Please clarify about the black coffee…is this coffee grounds? Or an actual cup of black coffee? I would not substitute espresso powder unless mixed with water. Caramels are a delicate balance of dry to liquid ingredients and you’ll need the liquid coffee to adhere to that ratio.Alicia —May 5, 2015 @ 4:15 PM Reply Made these caramels last night for a gift. Bailey's Irish Coffee Caramels Recipe (1)

Baileys Irish Cream, espresso and espresso flavored salt turn ordinary caramels into extraordinary bites of St. Patrick’s Day goodness in these Bailey’s Irish Coffee Caramels.

These Baileys Irish Coffee Caramels are incredibly addicting. The caramel is buttery rich with distinct pops of coffee and Bailey’s Irish Cream flavor. I had some Espresso Brava Salt from Saltworks on hand that enhanced the flavors beautifully, but plain sea salt could just as easily be substituted. Please don’t be intimidated by making homemade caramels – they’re foolproof with the help of a candy thermometer and this recipe is a must try this St. Patrick’s Day!

INGREDIENTS

  • ¼ cup black coffee
  • 1½ cups granulated sugar
  • ¼ cup light corn syrup
  • ¾ cup Baileys Irish Cream
  • ¼ cup heavy cream
  • 5 tablespoons unsalted butter
  • 1 teaspoon fine sea salt (I used Espresso Brava Salt)
  • ½ teaspoon pure vanilla extract

PREPARATION

  1. Line an 8×8 inch square cake pan by criss-crossing two sheets of parchment paper, being sure to cover all sides. Spray lightly with cooking spray and set aside.
  2. Combine coffee, sugar and corn syrup in a deep saucepan and bring to a boil over medium high heat. Boil until mixture is fragrant and a deep golden brown, swirling occasionally. The coffee makes this stage more difficult to judge on color alone, but the mixture should bubble and then clarify once the sugar has completely dissolved.
  3. In a small saucepan, bring Baileys, cream, butter and sea salt to a simmer while waiting for the sugar mixture to brown. Once simmering and butter melted, remove from heat and set aside.
  4. When sugar mixture is ready, turn off heat and slowly add cream mixture. Make sure that you use a deep saucepan for the sugar mixture and take caution as the sugar and cream combination will bubble violently at first.
  5. Stir in the vanilla with a wooden spoon and return the caramel to medium low heat. Stirring occasionally, cook for about 10 minutes until a candy thermometer reads 248 degrees Fahrenheit.
  6. Once desired temperature is reached, remove from heat and carefully pour caramel into prepared cake pan. Do not scrape sides of saucepan; this caramel will be slightly overdone and can be discarded.
  7. Refrigerate until caramel is set, about two hours.
  8. Remove caramel from pan and cut into desired size with a sharp knife. Wrap caramels with 4×4″ squares of candy foil or wax paper.

FAQs

What is difference between Irish coffee and Baileys and coffee? ›

Baileys coffee is a spin on Irish coffee using Baileys Irish Cream instead of cream and sugar. Irish coffee is a classic co*cktail you probably already know: warm coffee with a shot of Irish whiskey, topped with whipped cream. The modern version was invented in the 1950's in Ireland.

Why is Baileys creamy? ›

Every year, roughly 200 million litres of fresh Irish milk are required to produce the creamiest of cream used in the production of Baileys. That's enough to make about 3.3 billion Baileys milkshakes, give or take. This milk is mostly supplied from small, family-owned farms.

What is stronger, Kahlua or Baileys? ›

The Kahlua alcohol percentage is around 20%—slightly higher than Baileys alcohol content which is typically 17%. Kahlua and Baileys are versatile liqueurs that make delicious co*cktails when combined with other ingredients.

Should Baileys be refrigerated? ›

Per the Baileys official website, you don't need to find a spot in the refrigerator after cracking open a bottle; you just have to keep it in a dark place or out of direct sunlight, at a temperature between 32 degrees F and 77 degrees F.

Can I drink 10 year old Baileys? ›

Does Bailey's Irish Cream go bad or expire? Generally as long as you don't subject it to temperature extremes it will last well beyond the official 2 year "best taste before" date. Over time the taste will change and the liquid tends to go a bit darker but only really noticeable if you do a side by side comparison.

Why is Bailey's Irish cream so expensive? ›

Baileys is made from the very best of premium quality dairy cream, triple-distilled whiskey, and fine spirits. It takes about 220 million liters of fresh cream from 38,000 top-bred Irish dairy cows (Baileys Ladies) for the creation of baileys annually.

What is the best thing to mix with Baileys? ›

Baileys and vodka go so well together, and Baileys and coffee is already a classic mix! It's so simple to make at home. In just three easy steps, you'll have a show-stopping co*cktail that'll treat your friends – or why not add a touch of decadence to your group's movie night?

What is the difference between Irish coffee and Irish cream coffee? ›

Irish cream coffee (also known as Baileys coffee) can be considered a variant of Irish coffee, but involves the use of Irish cream as a "pre-mixed" substitute for the whisky, cream and sugar.

What is another name for Baileys coffee? ›

Irish cream coffee is a variant served with Irish cream. It is commonly also known as Baileys coffee or Sultan Special coffee, when served specifically with the brand, Baileys.

Are Baileys and Irish cream the same? ›

Baileys is made by Diageo at Nangor Road, in Dublin, Ireland and in Mallusk, Northern Ireland. It is the original Irish cream, invented by a team headed by Tom Jago in 1971 for Gilbeys of Ireland; Diageo currently owns the trademark. It has a declared alcohol content of 17% by volume.

What is special about Irish coffee? ›

Classic Irish coffees are made with just four ingredients: hot coffee, Irish whiskey, sugar and whipped cream. Oftentimes in restaurants, Irish coffees are overwhelmingly sweet and rich. I love making them at home because you can make them exactly how you like them. Plus, Irish coffees are so simple to make.
